peppers (preferably organic)

cut the peppers, removing the seeds, into pinky sized strips


carrots (preferably organic)

quarter each carrot and cut to length


salt & pepper

salt & pepper to taste


olive oil (preferably virgin)

cover the vegetables generously in olive oil


balsamic vinegar

cover the vegetables in balsamic vinegar



cut the peppers and carrots

salt and pepper

cover generously in olive oil

cover in balsamic vinegar

mix all the ingredients well

bake in a 325 pre heated over for 1.5 hrs




This is a standard italian simple recipe that is always a hit with friends and family.
